Description

A delightful dessert combining tart cranberries and creamy texture, perfect for any occasion.


Ingredients

Scale
  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water

Instructions

  1. Combine the cranberries and sugar in a saucepan. Cook over medium heat until the cranberries burst and soften, about 10 minutes. Remove from heat and let cool.
  2. Sprinkle the gelatin over the cold water in a small bowl and let sit for 5 minutes. Then, heat until the gelatin dissolves completely. Mix this gelatin into the cooled cranberry mixture.
  3. Whip the heavy cream and vanilla extract in another bowl until soft peaks form. Gently fold the whipped cream into the cranberry mixture until well combined.
  4. Pour the mousse into serving cups and refrigerate for at least 120 minutes, or until set.

Notes

Serve with whipped cream or fresh cranberries for decoration. Store covered in the refrigerator for up to 3 days.
