Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Romano cheese
  • 1 cup breadcrumbs (preferably Italian-style)
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. Place the chicken breasts between plastic wrap and pound them to an even thickness of 1/2 inch.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Romano cheese, garlic powder, oregano, salt, and pepper.
  4. Dredge each chicken breast in flour, dip in the egg, then coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Add breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
  6. Transfer the browned chicken to the baking sheet and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley if desired.
