Description

A cozy and creamy baked feta pasta dish with hearty chickpeas, perfect for vegetarians and meat-lovers.


Ingredients

  • 8 oz Pasta (penne, rigatoni, or rotini)
  • 1 block Feta Cheese
  • 2 cups Cherry Tomatoes
  • 1 can Chickpeas
  • 3 tablespoons Olive Oil
  • 3 cloves Garlic
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Dried Oregano or Italian Seasoning
  • ½ teaspoon Red Pepper Flakes (optional)
  • 1 cup Fresh Spinach
  • ¼ cup Fresh Basil
  • ¼ cup Sun-Dried Tomatoes or Roasted Vegetables (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in a large baking dish, surrounding it with cherry tomatoes and chickpeas.
  3. Drizzle olive oil over the feta, tomatoes, and chickpeas. Add minced garlic, salt, black pepper, oregano, and red pepper flakes (if using). Toss gently.
  4. Bake for about 30 minutes, or until the feta is soft and slightly browned.
  5. Cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Take the baked feta mixture out of the oven. Mash the melted feta with a fork and mix it with the tomatoes and chickpeas.
  7. Add the cooked pasta, fresh spinach, and basil to the baking dish. Toss until well combined.
  8. Serve warm, garnished with extra fresh basil or parmesan cheese if desired.

Notes

Feel free to add your favorite vegetables for extra nutrition. This dish also stores well in the fridge for about 3-4 days.
