- 4 thinly sliced chicken breasts
- 1 tbsp cajun seasoning
- 3 tbsp olive oil
- 2 tbsp butter
- 1 cup orzo
- 1 tbsp cajun seasoning
- 1 onion (diced)
- 1 shallot (minced)
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup parmesan (grated)
- 1 tbsp lemon juice (freshly squeezed)
- Fresh thyme and lemon wedges for garnish
Instructions
- Season the thinly sliced chicken breasts with cajun seasoning.
- Heat olive oil in a skillet over medium heat. Cook the chicken on both sides until fully cooked, reaching an internal temperature of 165°F. Remove the chicken from the pan and cover to keep warm.
- In the same skillet, add butter, diced onion, minced shallot, orzo, and the additional cajun seasoning. Sauté the mixture until the onions are translucent.
- Pour in the chicken broth and cook the orzo until it is al dente, stirring occasionally.
- Stir in heavy cream, parmesan cheese, and lemon juice to create a creamy sauce.
- Return the chicken to the pan and let it rest for 5 minutes before serving.
Notes
For added heat, consider adding cayenne pepper. This dish stores well in the refrigerator for up to 3 days.
