Ingredients

  • 4 thinly sliced chicken breasts
  • 1 tbsp cajun seasoning
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1 cup orzo
  • 1 tbsp cajun seasoning
  • 1 onion (diced)
  • 1 shallot (minced)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup parmesan (grated)
  • 1 tbsp lemon juice (freshly squeezed)
  • Fresh thyme and lemon wedges for garnish

Instructions

  1. Season the thinly sliced chicken breasts with cajun seasoning.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken on both sides until fully cooked, reaching an internal temperature of 165°F. Remove the chicken from the pan and cover to keep warm.
  3. In the same skillet, add butter, diced onion, minced shallot, orzo, and the additional cajun seasoning. Sauté the mixture until the onions are translucent.
  4. Pour in the chicken broth and cook the orzo until it is al dente, stirring occasionally.
  5. Stir in heavy cream, parmesan cheese, and lemon juice to create a creamy sauce.
  6. Return the chicken to the pan and let it rest for 5 minutes before serving.

Notes

For added heat, consider adding cayenne pepper. This dish stores well in the refrigerator for up to 3 days.
