- 8 oz pasta
- 1 lb chicken breast, diced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 cup fresh spinach
- Salt and pepper to taste
- Olive oil
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions. Drain it and set aside while we prepare the rest of the dish.
- Sauté the chicken in a large skillet with olive oil over medium heat until beautifully browned and fully cooked, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the heavy cream and grated Parmesan cheese until the cheese has melted and the sauce is creamy.
- Combine the cooked pasta and fresh spinach with the sauce, tossing to coat.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.
Notes
Serve with a side salad and garlic bread. Store leftovers in an airtight container in the fridge for up to three days.
