Description

A delightful and refreshing dish that combines sweet corn with a creamy dressing and savory toppings, perfect for summer gatherings.

Ingredients

Scale
  • 3 cups Corn Kernels (fresh, frozen, or canned)
  • 1 cup Mayonnaise (or substitute with Greek yogurt)
  • ½ cup Sour Cream (can be replaced with low-fat sour cream or Greek yogurt)
  • 1 packet Ranch Dressing Mix
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ¼ teaspoon Paprika
  • 1 cup Cheddar Cheese (or pepper jack)
  • ½ cup Bacon (or turkey bacon)
  • ¼ cup Green Onions (or chives or red onion)
  • to taste Salt
  • to taste Pepper
  • to taste Fresh Herbs (such as cilantro, chives, or parsley)
  • to taste Optional Add-ins (like diced bell peppers, cherry tomatoes, or avocado)

Instructions

  1. Combine the corn kernels, mayonnaise, and sour cream in a large bowl. Stir well to combine.
  2. Add the ranch dressing mix, garlic powder, onion powder, and paprika. Mix until everything is well coated.
  3. Fold in the cheddar cheese, bacon, and green onions.
  4. Season with salt, pepper, and fresh herbs to taste.
  5. If using optional add-ins, mix them in at this stage.
  6. Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together.

Notes

For a healthier option, swap out mayonnaise with Greek yogurt, and use low-fat sour cream. Fresh corn adds more crunch and sweetness than canned or frozen. Don’t skip the refrigeration step to enhance flavors.
