Ingredients

  • 5 ounces sun-dried tomato strips
  • 1¾ cups half-and-half
  • 3 cups baby spinach
  • ½ cup parmesan cheese

Instructions

  1. Sear seasoned salmon in olive oil over medium-high heat for about 5 minutes on each side until cooked through.
  2. Melt butter in the same skillet and sauté minced garlic and diced onion until fragrant.
  3. Add sun-dried tomatoes; then stir in half-and-half and let simmer.
  4. Mix in baby spinach until wilted and incorporate parmesan cheese until melted.
  5. Return salmon to the pan, drizzle sauce on top, and serve immediately.
