- 1 pound shrimp, peeled and deveined
- 2 cups mashed potatoes (store-bought or homemade)
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Melt 2 tablespoons of butter in a large pan over medium heat.
- Add the minced garlic and cook for about 1 minute, until fragrant.
- Season the shrimp with salt and pepper, then add to the pan. Cook for 2-3 minutes on each side until shrimp turn pink and opaque.
- Pour in the heavy cream and stir to combine. Let it simmer for 5 minutes to thicken slightly.
- Remove from heat and stir in the remaining butter until melted.
- Serve the creamy garlic shrimp over mashed potatoes, garnishing with fresh parsley and adding lemon wedges on the side.
