- 8 oz rotini pasta
- 1 cup pineapple chunks
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 1/2 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the cooled pasta, pineapple, red bell pepper, and green onions.
- In a separate bowl, whisk together the mayonnaise, yogurt, apple cider vinegar, and sugar until smooth.
- Pour the dressing over the pasta mixture and stir until everything is well coated.
- Season with salt and pepper to taste.
- Chill the pasta salad in the refrigerator for at least 1 hour before serving.
Notes
