Description

A delicious and refreshing pasta salad featuring rotini, sweet pineapple, and colorful vegetables, all coated in a creamy dressing.


Ingredients

  • 8 oz rotini pasta
  • 1 cup pineapple chunks
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooled pasta, pineapple, red bell pepper, and green onions.
  3. In a separate bowl, whisk together the mayonnaise, yogurt, apple cider vinegar, and sugar until smooth.
  4. Pour the dressing over the pasta mixture and stir until everything is well coated.
