Description

Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup heavy cream
  • 1 cup chicken broth or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo in a large pot of boiling salted water according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Season with salt and pepper.
  4. Pour in the chicken broth and bring it to a simmer. Add the heavy cream, lemon juice, and lemon zest, stirring well.
  5. Reduce the heat and let the sauce simmer for about 5 minutes until slightly thickened.
  6. Stir in the cooked orzo and mix until well combined. Cook for another 2 minutes to heat through.
  7. Garnish with fresh parsley before serving.

Notes

For more lemon flavor, add extra lemon juice or zest. Pair with a side salad or crusty bread.
