- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup heavy cream
- 1 cup chicken broth or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo in a large pot of boiling salted water according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Season with salt and pepper.
- Pour in the chicken broth and bring it to a simmer. Add the heavy cream, lemon juice, and lemon zest, stirring well.
- Reduce the heat and let the sauce simmer for about 5 minutes until slightly thickened.
- Stir in the cooked orzo and mix until well combined. Cook for another 2 minutes to heat through.
- Garnish with fresh parsley before serving.
Notes
For more lemon flavor, add extra lemon juice or zest. Pair with a side salad or crusty bread.
