Ingredients

- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 1/2 cups white chocolate chips
- 1/4 cup graham cracker crumbs
- Additional powdered sugar for dusting
Instructions
- Combine cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract in a mixing bowl. Mix until smooth.
- Melt the white chocolate chips in a microwave or double boiler. Once melted, mix them into the cream cheese mixture.
- Refrigerate the mixture for about 30 minutes or until firm enough to handle.
- Scoop out small portions and roll them into balls.
- Roll the balls in graham cracker crumbs and dust with additional powdered sugar if desired.
- Store the truffles in the refrigerator until ready to serve.
Notes
Best served chilled and can be stored in an airtight container for up to a week.
