Ingredients

  • 1 teaspoon olive oil
  • 11½ pounds boneless, skinless chicken breasts or thighs (diced into 1-inch pieces)
  • 2 teaspoons Italian Seasoning (divided)
  • Salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves (minced)
  • ¼ cup flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz pasta (small shells recommended)
  • 1 cup heavy whipping cream
  • ½1 cup grated Parmesan cheese
  • 2½3 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add diced chicken and season with Italian spices, salt, and pepper. Cook until browned for about 4–5 minutes.
  3. Stir in onions, carrots, celery, sundried tomatoes, and minced garlic; cook until the vegetables are translucent, around 3–4 minutes.
  4. Sprinkle flour over the mixture and stir well. If using, add tomato paste.
  5. Gradually whisk in chicken broth while stirring to avoid lumps.
  6. Bring to a boil; add pasta and adjust seasoning as needed. Cover and simmer for 20 minutes until the chicken is cooked and pasta is al dente.
  7. Stir in heavy cream, fresh spinach, and grated Parmesan; let it simmer for another 5 minutes.
  8. Taste and adjust seasoning before serving.

Notes

For added flavor, consider marinating the chicken with Italian seasoning for a few hours before cooking. Using low-sodium chicken broth is recommended for better salt control.
