- 4 boneless, skinless chicken breasts
- 2 cups mushrooms, sliced
- 1 cup Asiago cheese, shredded
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- Add minced garlic and sliced mushrooms to the same skillet. Sauté until mushrooms are tender.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Asiago cheese and dried thyme, cooking until the cheese melts and the sauce thickens.
- Return the chicken to the skillet, coating it with the sauce.
- Serve hot with a sprinkle of additional cheese if desired.
Notes
Serve over rice, pasta, or with roasted vegetables. Add parsley for garnish.
