- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well.
- Form the mixture into meatballs, about 1 inch in size.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until golden brown, about 5-7 minutes. Remove them from the pan and set aside.
- In the same skillet, add the sliced mushrooms and cook until they are soft, about 5 minutes.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Return the meatballs to the skillet, cover, and let them cook in the sauce for about 10 minutes.
- Serve hot, garnished with fresh parsley.
Notes
Use fresh herbs for better flavor. Consider adding vegetables like spinach or peas for extra nutrition.
