Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla. Mix until well combined.
  4. Add the eggs one at a time, mixing on low speed until just blended.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 1 hour, or until the center is set.
  7. Remove from the oven and let cool. Refrigerate for at least 4 hours before serving.
  8. Before serving, spread sour cream over the top for added flavor and a smooth finish.

Notes

Store any leftover cheesecake in the refrigerator, covered, for 5 to 7 days. Can be frozen for up to 2 months.
