- 2 cups milk (any variety, for creaminess)
- 1/4 cup maple syrup (for sweetness)
- 1 teaspoon cinnamon (for flavor)
- 1/4 teaspoon salt (enhances taste)
- 1 teaspoon vanilla extract (for aroma)
- 1/4 cup additional milk (optional, to adjust creaminess)
Instructions
- Place quinoa in a mesh colander and rinse under cold water until clear.
- In a medium pot, mix rinsed quinoa, milk, maple syrup, cinnamon, and salt. Stir until blended.
- Heat over medium-high until the mixture comes to a gentle boil.
- Reduce the heat to low, cover slightly cracked, and simmer for 20-25 minutes, stirring every 5 minutes.
- After 25 minutes, remove the lid and simmer for 5 more minutes until thickened.
- Stir in vanilla extract and mix in additional milk if desired for creaminess.
- Spoon the pudding into bowls and let cool for a few minutes before serving.
