Description

A warm and comforting soup filled with tender tortellini, savory sausage, and fresh vegetables in a creamy broth.


Ingredients

Scale
  • 1 pound Italian sausage
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups fresh spinach
  • 1 package (9 ounces) refrigerated tortellini
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Brown the sausage in a large pot over medium heat until browned. Drain excess fat.
  2. Sauté the diced carrots, celery, chopped onion, and minced garlic until the vegetables are tender.
  3. Combine the chicken broth and diced tomatoes. Bring to a boil.
  4. Add the refrigerated tortellini and cook until tender, about 3-5 minutes.
  5. Mix in the fresh spinach and heavy cream. Season with salt and pepper to taste.
  6. Serve the soup hot, topped with freshly grated Parmesan cheese.

Notes

This soup pairs beautifully with crusty bread or a fresh salad. Leftovers can be stored in the fridge for up to 3 days and also freeze well.
