- 1 pound Italian sausage
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups fresh spinach
- 1 package (9 ounces) refrigerated tortellini
- 1 cup heavy cream
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Brown the sausage in a large pot over medium heat until browned. Drain excess fat.
- Sauté the diced carrots, celery, chopped onion, and minced garlic until the vegetables are tender.
- Combine the chicken broth and diced tomatoes. Bring to a boil.
- Add the refrigerated tortellini and cook until tender, about 3-5 minutes.
- Mix in the fresh spinach and heavy cream. Season with salt and pepper to taste.
- Serve the soup hot, topped with freshly grated Parmesan cheese.
Notes
This soup pairs beautifully with crusty bread or a fresh salad. Leftovers can be stored in the fridge for up to 3 days and also freeze well.
