Ingredients

- 8 oz pasta (of your choice)
- 1 cup sun-dried tomatoes (packed in oil, chopped)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons capers
- 2 tablespoons fresh dill (chopped)
- Salt and pepper to taste
- Protein of your choice (optional)
Instructions
- Cook the pasta in a pot of salted boiling water until al dente, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Sauté the sun-dried tomatoes for about 2-3 minutes until fragrant.
- Pour in the heavy cream and stir to combine.
- Mix in the grated Parmesan cheese until melted and creamy.
- Stir in the capers and fresh dill, seasoning with salt and pepper to taste.
- Toss the cooked pasta in the sauce until well coated.
- Serve hot, adding your choice of protein if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of cream or milk to restore consistency.
