- 1 pound Lean Ground Beef
- 4 cups Chicken Broth
- 1 can Ro-tel Diced Tomatoes & Green Chilies
- 1 can Black Beans
- 1 cup Corn
- 1 medium Red Bell Pepper
- 2 tablespoons Chili Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- 8 ounces Cream Cheese
- Salt & Pepper
Instructions
- Brown the ground beef over medium heat. Break it up with a spoon as it cooks until it’s no longer pink. Drain any excess fat.
- Add the chicken broth, diced tomatoes, black beans, corn, and red bell pepper to the pot. Stir to combine.
- Sprinkle in the chili powder, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. Mix everything well.
- Bring the soup to a simmer and let it cook for about 10 minutes.
- Add the cream cheese to the pot and stir well until it’s melted and creamy.
- Taste the soup and adjust the seasoning if needed. Serve hot!
Notes
For extra flavor, let the soup simmer longer. Add jalapeños for spice or other vegetables for nutrition.
