Description

A delightful and creamy chicken dish with fresh basil and tomatoes, perfect for family dinners and special occasions.


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 can diced tomatoes (14 oz)
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Start by seasoning the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side, until the chicken is browned and fully cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the can of diced tomatoes (with juices) and bring to a simmer.
  5. Gradually stir in the heavy cream and continue to cook for 2 minutes.
  6. Add the fresh basil to the sauce and mix well.
  7. Return the cooked chicken to the skillet and simmer for an additional 2-3 minutes to heat through and let the flavors combine.

Notes

Serve over pasta or rice and pair with steamed vegetables or salad. Store leftovers in the refrigerator for up to 3 days.
