- 4 pieces boneless, skinless chicken breasts
- 1 can diced tomatoes (14 oz)
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Start by seasoning the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium heat. Once hot, add minced garlic and sauté for about 1 minute until fragrant.
- Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side, until the chicken is browned and fully cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the can of diced tomatoes (with juices) and bring to a simmer.
- Gradually stir in the heavy cream and continue to cook for 2 minutes.
- Add the fresh basil to the sauce and mix well.
- Return the cooked chicken to the skillet and simmer for an additional 2-3 minutes to heat through and let the flavors combine.
Notes
Serve over pasta or rice and pair with steamed vegetables or salad. Store leftovers in the refrigerator for up to 3 days.
