- 1 package (9 oz) cheese-filled tortellini
- 1 cup heavy cream

- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the diced tomatoes (with juices) and broth, bringing the mixture to a simmer.
- Cook the tortellini according to package instructions, typically about 5-7 minutes.
- Reduce the heat and stir in the heavy cream, cooking until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
For a thicker soup, reduce the amount of broth or increase the amount of cream. You can also add extra vegetables like spinach or mushrooms.
