Instructions
- Heat olive oil over medium heat in a large pot.
- Sauté onions and garlic until the onions are translucent, about 3-4 minutes.

- Add the cheese tortellini and cook according to package instructions, about 3-5 minutes, until the tortellini float to the top.

- Add the chopped spinach, if using, and cook for 2 minutes until wilted.
- Season with Italian seasoning, salt, and pepper to taste; stir well.
- Serve hot, garnished with grated Parmesan cheese and fresh parsley.
