Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 package (9 oz) fresh cheese tortellini
  • 1 cup heavy cream
  • 1 cup spinach, chopped (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Sauté onions and garlic until the onions are translucent, about 3-4 minutes.
  3. Pour in the vegetable broth and bring it to a simmer.
  4. Add the cheese tortellini and cook according to package instructions, about 3-5 minutes, until the tortellini float to the top.
  5. Reduce heat to low and stir in the heavy cream until well combined.
  6. Add the chopped spinach, if using, and cook for 2 minutes until wilted.
  7. Season with Italian seasoning, salt, and pepper to taste; stir well.
  8. Serve hot, garnished with grated Parmesan cheese and fresh parsley.
