Description

A delightful dip combining rich feta cheese with honey and crunchy pistachios, perfect for parties or snacks.


Ingredients

  • 8 oz (225 g) feta cheese, preferably packed in brine
  • 4 oz (115 g) cream cheese, softened (or Greek yogurt for a lighter version)
  • 2 tbsp (30 ml) honey, raw or wildflower
  • 1/4 cup (30 g) pistachios, shelled and roughly chopped, toasted
  • 1 tbsp (15 ml) fresh lemon juice
  • 1 tbsp (15 ml) extra virgin olive oil
  • 1 small clove garlic, minced (optional)
  • Black pepper, freshly cracked, to taste
  • Fresh herbs (dill, thyme, or oregano), chopped (optional)

Instructions

  1. Drain the feta if it is packed in brine.
  2. Roughly chop and lightly toast the pistachios in a dry pan over medium heat for 2-3 minutes until fragrant. Let them cool.
  3. In a food processor, combine the feta cheese, softened cream cheese, minced garlic, lemon juice, and olive oil. Pulse until smooth and creamy, scraping down the sides as needed.
  4. Add 1 tablespoon of honey and pulse briefly to incorporate. Taste the dip and add more honey if desired.
  5. Add freshly cracked black pepper and pulse once more. Fold in fresh herbs gently with a spatula, if using.
  6. Transfer the dip to a serving bowl. Drizzle the remaining honey on top and sprinkle with toasted pistachios. Optionally, drizzle a little olive oil for a glossy finish.
  7. Serve with warm pita bread, toasted baguette slices, or crunchy vegetable sticks.

Notes

For a lighter version, substitute cream cheese with Greek yogurt. Adjust honey based on sweetness preference, and consider adding a pinch of red pepper flakes for heat.
