A delightful dip combining rich feta cheese with honey and crunchy pistachios, perfect for parties or snacks.
Ingredients

- 8 oz (225 g) feta cheese, preferably packed in brine
- 4 oz (115 g) cream cheese, softened (or Greek yogurt for a lighter version)
- 2 tbsp (30 ml) honey, raw or wildflower
- 1/4 cup (30 g) pistachios, shelled and roughly chopped, toasted
- 1 tbsp (15 ml) fresh lemon juice
- 1 tbsp (15 ml) extra virgin olive oil
- 1 small clove garlic, minced (optional)
- Black pepper, freshly cracked, to taste
- Fresh herbs (dill, thyme, or oregano), chopped (optional)
Instructions
- Drain the feta if it is packed in brine.
- Roughly chop and lightly toast the pistachios in a dry pan over medium heat for 2-3 minutes until fragrant. Let them cool.
- In a food processor, combine the feta cheese, softened cream cheese, minced garlic, lemon juice, and olive oil. Pulse until smooth and creamy, scraping down the sides as needed.
- Add 1 tablespoon of honey and pulse briefly to incorporate. Taste the dip and add more honey if desired.
- Add freshly cracked black pepper and pulse once more. Fold in fresh herbs gently with a spatula, if using.
- Transfer the dip to a serving bowl. Drizzle the remaining honey on top and sprinkle with toasted pistachios. Optionally, drizzle a little olive oil for a glossy finish.
- Serve with warm pita bread, toasted baguette slices, or crunchy vegetable sticks.
Notes
For a lighter version, substitute cream cheese with Greek yogurt. Adjust honey based on sweetness preference, and consider adding a pinch of red pepper flakes for heat.
