Ingredients

  • 1 ½ cups graham cracker crumbs
  • â…“ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 8 oz white chocolate, chopped
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ¼ cup heavy cream (optional)

Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar until wet sand texture. Press into a 9-inch springform pan. Chill in fridge.
  2. Melt white chocolate gently using a double boiler or microwave in short bursts, stirring until smooth.
  3. Beat cream cheese and sugar in a large bowl until smooth and fluffy.
  4. Add eggs one at a time, mixing gently after each addition, then stir in vanilla extract.
  5. Fold melted white chocolate, sour cream, and heavy cream into the mixture until combined.
  6. Pour filling over the crust, and bake at 325°F (160°C) for 50 minutes until edges are set.
  7. Let cool at room temperature for 1 hour, then refrigerate for at least 4 hours to set.

Notes

Serve topped with fresh fruits, chocolate shavings, or whipped cream. Store leftovers in the refrigerator or freeze for up to 3 months.
