- 8 ounces smoked salmon, thinly sliced
- 1 large English cucumber or 2 smaller Persian cucumbers, sliced into 1/2-inch rounds
- 4 ounces cream cheese, softened
- 2 tablespoons fresh dill, finely chopped
- Zest of 1 lemon
- 1 teaspoon fresh lemon juice
- Salt and black pepper, to taste
- 1 tablespoon capers, drained (optional)
- Chives or green onions, thinly sliced (optional)
Instructions
- Combine softened cream cheese, chopped fresh dill, lemon zest, and lemon juice in a mixing bowl. Blend until smooth and fluffy, about 2 minutes. Season with salt and black pepper. If the cream cheese is too stiff, add a teaspoon of milk or water to loosen it.
- Slice the cucumber into 1/2-inch thick rounds and pat dry with a paper towel.
- Cut the smoked salmon into pieces roughly the size of the cucumber rounds if the slices are large.
- Spread a generous dollop of dill cream cheese on each cucumber slice. Top with a piece of smoked salmon. Optionally, add a caper or sprinkle with thinly sliced chives.
- Arrange the cucumber bites on a platter and refrigerate for 10-15 minutes before serving to meld flavors.
Notes
Best served fresh but can be stored in the refrigerator for up to 1 day in an airtight container.
