- 2 pounds Yukon Gold Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 6 slices Bacon
- 1/4 cup Honey
- 2 cloves Garlic, minced
- 2 tablespoons Fresh Parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the Yukon Gold potatoes into bite-sized pieces.
- Mix the potatoes with olive oil, salt, and black pepper until well coated.
- Spread the potatoes on a baking sheet in a single layer.
- Bake the potatoes for 25 minutes.
- Cook the bacon in a pan until crispy, then crumble it.
- Drizzle honey over the baked potatoes, add minced garlic and crumbled bacon, then toss.
- Return the potatoes to the oven and bake for an additional 15–20 minutes.
- Remove from the oven and sprinkle fresh parsley on top before serving.
Notes
For even cooking, cut the potatoes into uniform sizes. Don’t overcrowd the baking sheet for maximum crispiness.
