Description

These crispy bacon honey roasted potatoes are golden, crunchy, and sweet, making them perfect for any meal or gathering.


Ingredients

  • 2 pounds Yukon Gold Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 6 slices Bacon
  • 1/4 cup Honey
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the Yukon Gold potatoes into bite-sized pieces.
  3. Mix the potatoes with olive oil, salt, and black pepper until well coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Bake the potatoes for 25 minutes.
  6. Cook the bacon in a pan until crispy, then crumble it.
  7. Drizzle honey over the baked potatoes, add minced garlic and crumbled bacon, then toss.
  8. Return the potatoes to the oven and bake for an additional 15–20 minutes.
  9. Remove from the oven and sprinkle fresh parsley on top before serving.

Notes

For even cooking, cut the potatoes into uniform sizes. Don’t overcrowd the baking sheet for maximum crispiness.
