Ingredients

  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the toffee bits until evenly distributed throughout the dough.
  7. Using a cookie scoop, drop rounded balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For a gluten-free option, substitute the all-purpose flour with almond flour or a gluten-free flour blend. For dairy-free, use coconut oil instead of butter.
