- 2 boneless, skinless chicken breasts
- 1 cup dill pickle slices
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 egg
- Cooking oil for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper in a bowl.
- Beat the egg in a separate bowl. Dip each chicken breast into the egg, making sure to coat it well.
- Press the chicken into the breadcrumb mixture until fully coated.
- Heat a skillet over medium heat and add cooking oil. Once hot, place the coated chicken breasts in the skillet. Cook for about 3-4 minutes on each side until golden brown.
- Transfer the chicken breasts to a baking sheet. Top with dill pickle slices and bake in the oven for 15-20 minutes, or until fully cooked (internal temperature of 165°F or 75°C).
- Remove from the oven and let the chicken rest for a few minutes before serving.
Notes
For extra crunch, double dip the chicken. Experiment with different seasonings for varied flavors.
