Ingredients

- 2 large Russet or Yukon Gold potatoes
- 3 tablespoons oil (olive, avocado, or vegetable)
- 1/2 tablespoon salt
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Soak cut potatoes in cold water for 15 to 30 minutes to remove excess starch.
- Rinse and thoroughly dry the potatoes.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss dried potato matchsticks with oil and seasonings until evenly coated.
- Spread potatoes in a single layer on the baking sheet.
- Bake for 15 minutes, flip, then bake for an additional 15 to 20 minutes until golden brown.
- Let rest for 5 minutes before serving.
Notes
For extra flavor, serve with ketchup, mayonnaise, or your favorite dipping sauce.
