- 1 pound garlic scapes, trimmed and cut into 2-inch pieces
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt (adjust to taste)
- 1/2 teaspoon freshly cracked black pepper
- Optional: squeeze of fresh lemon juice
- Optional: pinch of red pepper flakes
- Optional: pinch of smoked paprika
- Optional: grated Parmesan cheese
Instructions
- Rinse garlic scapes under cold water and pat dry thoroughly with paper towels.
- Trim the tough ends and cut into 2-inch pieces.
- Place a large non-stick skillet or cast iron pan over medium heat and add olive oil. Let the oil warm for about 2 minutes.
- Spread the garlic scapes in a single layer in the pan. Let them cook without stirring for about 3 minutes.
- Use tongs to gently turn the scapes. Cook for another 5 to 7 minutes until tender with browned, crispy edges.
- Sprinkle with sea salt and freshly cracked black pepper, and toss well.
- Add optional lemon juice or red pepper flakes if desired.
- Transfer to a plate and serve immediately while hot and crispy.
Notes
Make sure the garlic scapes are dry before cooking for the best crispiness. Don’t overcrowd the pan; cook in batches if needed.
