- 2 lb chicken thighs (trimmed and cut into 1-inch pieces)
- 1/2 cup corn starch
- 1/4 cup extra light olive oil (for frying)
- 2 tbsp minced ginger
- 3 cloves garlic
- 5 tbsp low sodium soy sauce
- 3 tbsp rice vinegar
- 4 tbsp granulated sugar
- 1/2 tsp red pepper flakes (or added to taste)
- 1 tsp sesame seeds (optional for garnish)
Instructions
- Coat chicken pieces in cornstarch and set aside on a platter.
- In a mixing bowl, whisk together ginger, garlic, soy sauce, rice vinegar, sugar, and red pepper flakes to make the sauce.
- Heat oil in a non-stick skillet over medium heat. Fry chicken in batches until golden brown and cooked through; set aside.
- In the same skillet, sauté garlic and ginger until fragrant. Add the sauce mixture and let simmer briefly.
- Toss fried chicken back into the skillet to coat with the sauce and serve garnished with sesame seeds if desired.
Notes
Ensure the oil is hot enough for frying to achieve the crispy texture. Adjust red pepper flakes for desired spiciness.
