Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Lemon slices (for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, dried thyme, and paprika.
  3. Pat the chicken thighs dry with a paper towel; place them in a baking dish.
  4. Pour the marinade over the chicken thighs and rub it in thoroughly.
  5. Place the chicken thighs skin-side up, and arrange lemon slices around them.
  6. Bake in the preheated oven for about 35-40 minutes, or until the chicken is crispy and reaches an internal temperature of 165°F (74°C).
  7. Garnish with fresh parsley before serving.
