  • 2 large eggs

  • 3 tablespoons olive oil
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Start by preheating your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. Set Up Breading Stations: In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Bread the Chicken: Dredge each chicken breast in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.
  4. Cook the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts. Cook for about 3-4 minutes on each side until golden brown.
  5. Bake the Chicken: Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Make the Garlic Cream Sauce: In a separate saucepan, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring well, and let it simmer for about 5 minutes until slightly thickened. Season with salt and pepper to taste.
  7. Serve: Once the chicken is cooked, remove it from the oven. Drizzle the garlic cream sauce over the chicken and garnish with fresh parsley before serving.

Notes

Pairs well with steamed vegetables, mashed potatoes, or fresh salad. For extra crispiness, use panko breadcrumbs.
