- 4 fillets Salmon
- 1 cup Grated Parmesan Cheese
- 1 cup Panko Breadcrumbs
- 2 tablespoons Fresh Parsley
- 4 tablespoons Unsalted Butter
- 2 cloves Garlic
- 1 tablespoon Lemon Zest
- 2 tablespoons Lemon Juice
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Mix the grated Parmesan cheese, panko breadcrumbs, minced garlic, chopped parsley, lemon zest, salt, and pepper in a bowl.
- Melt the unsalted butter in another bowl and mix in the olive oil and lemon juice.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the tops of the salmon fillets with the butter-oil mixture.
- Press the Parmesan breadcrumb mixture firmly onto each salmon fillet to create a crust.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
- Remove from the oven and let it sit for a couple of minutes before serving.
Notes
Serve with a side of roasted vegetables or fresh salad and a wedge of lemon. Store leftovers in an airtight container in the fridge for up to 3 days.
