Description

A delightful and healthy dish featuring salmon topped with a crispy parmesan crust, perfect for quick weeknight dinners or impressing guests.


Ingredients

  • 4 fillets Salmon
  • 1 cup Grated Parmesan Cheese
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Fresh Parsley
  • 4 tablespoons Unsalted Butter
  • 2 cloves Garlic
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the grated Parmesan cheese, panko breadcrumbs, minced garlic, chopped parsley, lemon zest, salt, and pepper in a bowl.
  3. Melt the unsalted butter in another bowl and mix in the olive oil and lemon juice.
  4. Place the salmon fillets on a baking sheet lined with parchment paper.
  5. Brush the tops of the salmon fillets with the butter-oil mixture.
  6. Press the Parmesan breadcrumb mixture firmly onto each salmon fillet to create a crust.
  7. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
  8. Remove from the oven and let it sit for a couple of minutes before serving.

Notes

Serve with a side of roasted vegetables or fresh salad and a wedge of lemon. Store leftovers in an airtight container in the fridge for up to 3 days.
