- 2 medium sweet potatoes
- 1 cup red lentils
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 1/4 cup breadcrumbs (optional)
- Oil for frying
Instructions
- Prep the sweet potatoes: Peel and dice the sweet potatoes, then boil them until tender. Once they’re nicely softened, drain and mash them until smooth.
- Cook the lentils: In a pot, cook the red lentils with water until soft. Once cooked, drain any excess water.
- Combine ingredients: In a mixing bowl, combine the mashed sweet potatoes, cooked lentils, chopped onion, garlic, cumin, coriander, salt, and pepper. If the mixture seems a bit too wet, feel free to add breadcrumbs to help bind it together.
- Form the patties: With clean hands, form the mixture into small patties, about the size of your palm. Set them aside for frying.
- Fry the patties: Heat oil in a frying pan over medium heat. Carefully place the patties in the hot oil and cook until they are golden brown on both sides, about 2-3 minutes per side.
- Serve hot: Once cooked, remove the patties from the pan and drain on paper towels. Serve hot and enjoy the crunchy exterior and soft, flavorful interior.
Notes
Always taste your mixture before frying! Adjust the seasoning to your liking. Can be served with yogurt dip or in a pita.
