- 2 lbs beef stew meat
- 4 pieces carrots, sliced
- 4 pieces potatoes, diced
- 1 piece onion, diced
- 4 cups beef broth (ensure gluten-free if needed)
- 1 tsp garlic powder
- 1 tsp dried thyme
- To taste salt and pepper
- 2 tbsp olive oil
Instructions
- Start by cutting the beef into bite-sized pieces.
- Slice the carrots and dice the potatoes and onion.
- In a skillet, heat the olive oil over medium-high heat.
- Brown the beef stew meat for about 5-7 minutes until it’s nicely seared on all sides.
- Transfer the browned meat to the crockpot.
- Add the sliced carrots, diced potatoes, and diced onion.
- Pour in the beef broth.
- Sprinkle in the garlic powder, dried thyme, salt, and pepper.
- Stir everything together gently.
- Cover and cook on low for 420 minutes or on high for 240-300 minutes until the beef is tender.
Notes
For a thicker stew, mix 1-2 tablespoons of cornstarch with water and add it during the last 30 minutes of cooking. Feel free to add more veggies like peas or bell peppers.
