Ingredients

  • 2 lbs beef stew meat
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, diced
  • 4 cups beef broth (ensure gluten-free if needed)
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • To taste salt and pepper
  • 2 tbsp olive oil

Instructions

  1. Start by cutting the beef into bite-sized pieces.
  2. Slice the carrots and dice the potatoes and onion.
  3. In a skillet, heat the olive oil over medium-high heat.
  4. Brown the beef stew meat for about 5-7 minutes until it’s nicely seared on all sides.
  5. Transfer the browned meat to the crockpot.
  6. Add the sliced carrots, diced potatoes, and diced onion.
  7. Pour in the beef broth.
  8. Sprinkle in the garlic powder, dried thyme, salt, and pepper.
  9. Stir everything together gently.
  10. Cover and cook on low for 420 minutes or on high for 240-300 minutes until the beef is tender.

Notes

For a thicker stew, mix 1-2 tablespoons of cornstarch with water and add it during the last 30 minutes of cooking. Feel free to add more veggies like peas or bell peppers.
