- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup marinara sauce
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- Pour in the chicken broth, diced tomatoes, marinara sauce, and sprinkle in Italian seasoning. Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken breasts, shred them in the pot, and return them.
- Add in the heavy cream and mozzarella cheese, stirring to combine.
- Let the soup cook until the cheese is fully melted and everything is combined.
- Serve hot, garnished with Parmesan cheese and fresh basil if desired.
Notes
For a thicker soup, consider adding a slurry of cornstarch and water 30 minutes before it’s done.
