Ingredients

- 2 medium sweet potatoes, diced
- 1 cup lentils (green or brown), rinsed
- 1 can coconut milk
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place the diced sweet potatoes, rinsed lentils, chopped onion, minced garlic, curry powder, cumin, salt, and pepper in the crockpot.
- Pour in the coconut milk and vegetable broth.
- Stir to combine all the ingredients.
- Set your crockpot on low and cook for about 360-480 minutes or high for 180-240 minutes until the sweet potatoes and lentils are tender.
- Taste and adjust seasoning if necessary.
- Serve warm, garnished with fresh cilantro.
