Ingredients
Scale
- 3–4 lb chuck roast
- Salt (to taste)
- Pepper (to taste)
- Garlic powder (to taste)
- 2 tbsp butter
- 1 sliced onion
- 2 tbsp minced garlic
- 2 tbsp Worcestershire sauce
- 12 oz beef broth (plus additional for mixing)
- 1 package Au Jus mix
- 1½ cups beef broth
- 6 sub rolls
- Provolone cheese (for topping)
Instructions
- Season the chuck roast with salt, pepper, and garlic powder.
- Heat the butter in a skillet over medium heat. Sear the roast on all sides until browned.
- Remove the roast from the skillet and place it in the crockpot.
- Add sliced onions and minced garlic to the skillet. Sauté until the onions are softened.
- Stir in Worcestershire sauce, 12 oz of beef broth, and the Au Jus mix until well combined.
- Pour the onion mixture over the roast in the crockpot.
- Add the 1½ cups of beef broth to the crockpot.
- Cover and cook on low for 480 minutes or high for 240 minutes, until the meat is tender.
- Once the cooking time is up, shred the beef with two forks and mix it in the juices.
- Toast the sub rolls if desired.
- Pile the shredded beef on each roll and top with provolone cheese.
- Serve hot with the broth as a dipping sauce.
Notes
For a thicker dipping sauce, let the broth simmer until it reduces. Use good quality sub rolls to hold all the juicy goodness.
