Description

A quick and flavorful side dish perfect for gatherings, featuring sweet corn, crunchy veggies, creamy dressing, and salty Fritos.


Ingredients

Scale
  • 30 ounces frozen yellow corn
  • 1½ cups shredded sharp cheddar cheese
  • ¾ cup diced green bell pepper
  • ¾ cup diced red onion
  • 1 cup mayonnaise
  • 1 tablespoon taco seasoning
  • 2 teaspoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 cups Fritos corn chips

Instructions

  1. Add the yellow corn, shredded sharp cheddar cheese, diced green bell pepper, and diced red onion to a large mixing bowl. Set aside.
  2. Stir together the mayonnaise, taco seasoning, lime juice, salt, and black pepper in a small mixing bowl until smooth and combined.
  3. Add the mayonnaise mixture to the large bowl of vegetables. Stir to fully coat with the mayonnaise mixture. Cover and refrigerate for at least 1-2 hours or until chilled.
  4. Gently stir in 4½ cups of Fritos corn chips. Be careful not to break up the chips too much.
  5. Top with the remaining ½ cup of Fritos for garnish and serve.

Notes

For extra spice, consider adding diced jalapeños or a dash of hot sauce to the dressing. You can substitute pepper jack cheese for a kick.
