A quick and flavorful side dish perfect for gatherings, featuring sweet corn, crunchy veggies, creamy dressing, and salty Fritos.

- 30 ounces frozen yellow corn
- 1½ cups shredded sharp cheddar cheese
- ¾ cup diced green bell pepper
- ¾ cup diced red onion
- 1 cup mayonnaise
- 1 tablespoon taco seasoning
- 2 teaspoons fresh lime juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 5 cups Fritos corn chips
Instructions
- Add the yellow corn, shredded sharp cheddar cheese, diced green bell pepper, and diced red onion to a large mixing bowl. Set aside.
- Stir together the mayonnaise, taco seasoning, lime juice, salt, and black pepper in a small mixing bowl until smooth and combined.
- Add the mayonnaise mixture to the large bowl of vegetables. Stir to fully coat with the mayonnaise mixture. Cover and refrigerate for at least 1-2 hours or until chilled.
- Gently stir in 4½ cups of Fritos corn chips. Be careful not to break up the chips too much.
- Top with the remaining ½ cup of Fritos for garnish and serve.
Notes
For extra spice, consider adding diced jalapeños or a dash of hot sauce to the dressing. You can substitute pepper jack cheese for a kick.
