  • 46 bone-in, skin-on chicken thighs
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 6 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional for heat)

Instructions

  1. Combine the fresh orange juice, lime juice, minced garlic, cilantro, olive oil, cumin, oregano, salt, black pepper, and red pepper flakes in a mixing bowl.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they’re well coated. Seal the bag or cover the dish and refrigerate for 1-2 hours or overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Remove chicken from the marinade, allowing excess to drip off, and place in a baking dish or lined baking sheet skin-side up.
  5. Bake for 30-35 minutes until golden brown and the internal temperature reaches 165°F (75°C).
  6. Switch to broil for an additional 3-5 minutes for crispy skin, watching closely to avoid burning.
  7. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
