- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 6 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional for heat)
Instructions
- Combine the fresh orange juice, lime juice, minced garlic, cilantro, olive oil, cumin, oregano, salt, black pepper, and red pepper flakes in a mixing bowl.
- Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they’re well coated. Seal the bag or cover the dish and refrigerate for 1-2 hours or overnight.
- Preheat your oven to 425°F (220°C).
- Remove chicken from the marinade, allowing excess to drip off, and place in a baking dish or lined baking sheet skin-side up.
- Bake for 30-35 minutes until golden brown and the internal temperature reaches 165°F (75°C).
- Switch to broil for an additional 3-5 minutes for crispy skin, watching closely to avoid burning.
- Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
- Garnish with extra chopped cilantro and serve with lime wedges.
