Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces dark chocolate (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the water and butter in a saucepan and bring it to a boil.
- Stir in the flour and salt until a ball forms.
- Remove from heat and let cool slightly.
- Beat in the eggs one at a time until smooth.
- Transfer the dough to a piping bag and pipe onto a baking sheet.
- Bake for 20-25 minutes until puffed and golden brown.
- Whip the cream with powdered sugar and vanilla until stiff peaks form.
- Fill the eclairs with whipped cream using a pastry bag.
- Heat 1/2 cup of heavy cream to make the ganache.
- Dip each eclair into the ganache to coat.
- Allow the ganache to set before serving.
Notes
For best results, use room temperature eggs and allow eclairs to cool completely before filling.
