Description

Delight in these Dark Chocolate Eclairs with airy choux pastry and rich whipped cream filling, topped with silky dark chocolate ganache.


Ingredients

Scale
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the water and butter in a saucepan and bring it to a boil.
  3. Stir in the flour and salt until a ball forms.
  4. Remove from heat and let cool slightly.
  5. Beat in the eggs one at a time until smooth.
  6. Transfer the dough to a piping bag and pipe onto a baking sheet.
  7. Bake for 20-25 minutes until puffed and golden brown.
  8. Whip the cream with powdered sugar and vanilla until stiff peaks form.
  9. Fill the eclairs with whipped cream using a pastry bag.
  10. Heat 1/2 cup of heavy cream to make the ganache.
  11. Dip each eclair into the ganache to coat.
  12. Allow the ganache to set before serving.

Notes

For best results, use room temperature eggs and allow eclairs to cool completely before filling.
