- 2 cups (300 g) dark sweet cherries, pitted (fresh or frozen)
- 3 large eggs, room temperature
- 1 cup (240 ml) whole milk (substitute almond milk for dairy-free)
- ½ cup (65 g) all-purpose flour, sifted

- 1 tsp pure vanilla extract
- Pinch of salt
- 3 tbsp (45 g) unsalted butter, softened
- ¼ cup (30 g) almond flour
- 3 tbsp (25 g) powdered sugar
- ½ tsp almond extract
- ¼ cup (60 ml) heavy cream (can substitute coconut cream for dairy-free)
- Powdered sugar, for dusting (optional)
- 2 tbsp slivered almonds, toasted (optional)
Instructions
- Preheat your oven to 350°F (175°C). Place the oven rack in the middle position.
- Pit the cherries and, if using frozen ones, thaw and pat them dry.
- Make the almond cream: In a mixing bowl, cream together the softened unsalted butter and powdered sugar until smooth and fluffy (about 2-3 minutes with a mixer).
- Add the almond flour and almond extract to the butter mixture. Mix until well incorporated.
- Slowly pour in the heavy cream while mixing to form a silky, spreadable cream. Set it aside.
- In another bowl, whisk together the eggs and granulated sugar until thickened and pale, about 2 minutes.
- Add the milk and vanilla extract to the egg mixture. Whisk until smooth.
- Gently fold in the sifted all-purpose flour and a pinch of salt. The batter should be slightly thick but pourable.
- Lightly butter your baking dish or skillet. Spread a thin layer of almond cream evenly on the bottom and sides.
- Scatter the cherries over the almond cream layer evenly.
- Pour the batter gently over the cherries, ensuring they do not all sink to the bottom.
- Bake for 35-40 minutes until slightly puffed and golden around the edges. The center should wobble but not be liquid.
- Remove from the oven and let cool on a rack for 15 minutes to settle.
Notes
Serve warm dusted with powdered sugar; add vanilla ice cream or whipped cream for extra indulgence.
