- 12 ounces red velvet wafer cookies or thin red velvet cake layers
- 2 cups heavy whipping cream, cold
- 4 ounces cream cheese, softened
- 3/4 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1 tablespoon cocoa powder (optional)
- Pinch of salt
Instructions
- Prepare the whipped cream mixture: In a large chilled bowl, beat the cold heavy whipping cream on medium-high speed until it starts to thicken, about 2 minutes.
- In a separate bowl, beat the softened cream cheese with the powdered sugar, vanilla extract, salt, and optional cocoa powder until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture using a spatula, keeping as much air in as possible.
- Layer the icebox cake: Spread a thin layer (about 1/3 cup or 80 ml) of the whipped cream mixture evenly on the bottom of your dish. Arrange a single layer of red velvet wafers or cake slices over the cream, overlapping slightly. Spread another layer of whipped cream on top, smoothing it out, and repeat layering cookies and cream until finished with a cream layer on top. Reserve some cream for the final topping.
- Chill the cake: Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 360 minutes, preferably overnight.
- Before serving, spread the reserved whipped cream evenly on top and optionally dust with cocoa powder or shaved white chocolate. Cut into squares with a sharp knife dipped in hot water for clean edges. Serve chilled.
Notes
Use cold heavy cream for better volume. Customize with toppings like crushed nuts or berries. This cake can be made a day in advance for better flavor.
