- 1/2 cup Unsalted Butter (melted)
- 16 oz Room-Temperature Cream Cheese
- 1/2 cup Sour Cream
- 3 large Eggs (room-temperature)
- 1/4 cup Cornstarch
- 2 teaspoons Vanilla Extract (or vanilla bean)
- 5 medium Apples (peeled, cored, and chopped)
- 1/4 cup Brown Sugar
- 1/2 teaspoon Nutmeg
- 1 tablespoon Lemon Juice
- 1 cup Rolled Oats (or quick oats)
- 1/2 cup Flour
Instructions
- Preheat your oven to 325°F (165°C).
- Mix the graham crackers, granulated sugar, cinnamon, and melted butter in a bowl. Press this mixture into the bottom of a springform pan to create the crust.
- Blend the cream cheese until smooth in another bowl. Add the sour cream, eggs, cornstarch, and vanilla extract. Mix until combined and creamy.
- Toss the chopped apples with brown sugar, nutmeg, and lemon juice in a separate bowl. Layer this mixture over the cheesecake filling in the springform pan.
- Mix the rolled oats, flour, and a bit of brown sugar in a final bowl to create the crumble topping. Sprinkle this over the apple layer.
- Bake in the preheated oven for about 60-70 minutes, or until the center is set and the topping is golden.
- Cool before removing from the pan. Chill in the refrigerator for at least 240 minutes before serving.
Notes
Serve chilled with whipped cream or vanilla ice cream. Garnish with cinnamon or caramel sauce for extra flavor.
