Description

A delightful treat combining pumpkin spice flavors with a crunchy crumble topping, perfect for fall gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup evaporated milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. Combine flour, oats, brown sugar, granulated sugar, cinnamon, nutmeg, and salt in a medium bowl. Mix well.
  3. Add melted butter and stir until crumbly. Press half of the mixture into the bottom of the prepared pan.
  4. Whisk together pumpkin puree, egg, vanilla extract, and evaporated milk in another bowl until smooth. Pour the pumpkin mixture over the crust.
  5. Sprinkle the remaining crumble mixture on top of the pumpkin layer.
  6. Bake for 35-40 minutes, or until the topping is golden brown.
  7. Allow to cool before cutting into bars. Enjoy!

Notes

Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream. Bars can be refrigerated for up to a week or frozen for longer storage.
