Ingredients

- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup evaporated milk
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- Combine flour, oats, brown sugar, granulated sugar, cinnamon, nutmeg, and salt in a medium bowl. Mix well.
- Add melted butter and stir until crumbly. Press half of the mixture into the bottom of the prepared pan.
- Whisk together pumpkin puree, egg, vanilla extract, and evaporated milk in another bowl until smooth. Pour the pumpkin mixture over the crust.
- Sprinkle the remaining crumble mixture on top of the pumpkin layer.
- Bake for 35-40 minutes, or until the topping is golden brown.
- Allow to cool before cutting into bars. Enjoy!
Notes
Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream. Bars can be refrigerated for up to a week or frozen for longer storage.
