Description

A flavorful appetizer combining roasted tomatoes and creamy burrata cheese, perfect for gatherings.


Ingredients

  • 2 cups Cherry Tomatoes
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 clove Garlic (Minced)
  • 1 tablespoon Fresh Parsley (Chopped)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Cracked Pepper
  • 1 tablespoon Fresh Basil (Chopped)
  • 1/2 cup Parmesan Cheese (Grated)
  • 2 balls Burrata
  • 1/4 teaspoon Red Pepper Flakes (Optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cherry tomatoes, olive oil, minced garlic, parsley, salt, and pepper in a baking dish. Toss everything together until well coated.
  3. Roast in the oven for about 25-30 minutes, or until the tomatoes start to burst and caramelize.
  4. Remove the dish from the oven and let it cool slightly. After cooling, mash some of the tomatoes with a fork, leaving some whole for texture.
  5. Stir in the fresh basil and grated parmesan cheese until mixed well.
  6. Place the burrata on top of the tomato mixture. Drizzle with extra olive oil and sprinkle with red pepper flakes if using.

Notes

Serve warm or at room temperature. Store leftovers in an airtight container for 2-3 days, reheat gently.
