- 1 lb Chicken breast
- 8 oz Rice noodles
- 2 cups Fresh vegetables (bell peppers, carrots, broccoli)
- 1/2 cup Fresh herbs (cilantro, green onions)
- 1/2 cup Peanut butter
- 1/4 cup Soy sauce
- 2 tbsp Lime juice
- 2 cloves Garlic
- 1 inch Ginger
- 2 tbsp Sesame oil
- 1 tsp Chili flakes (optional)
Instructions
- Cook the Rice Noodles according to package instructions; drain and set aside.
- Sauté the Chicken in a pan with sesame oil over medium heat until golden brown.
- Add minced garlic and ginger; sauté for a minute to meld the flavors.
- Incorporate fresh vegetables and stir-fry until just tender.
- Mix peanut butter, soy sauce, lime juice, and chili flakes to make the peanut sauce.
- Add cooked noodles and sauce to the pan; toss to combine.
- Serve topped with fresh herbs for added freshness.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water if needed.
