Description

A comforting dish filled with stir-fried vegetables, rich peanut sauce, and tender chicken, reminiscent of vibrant Thai street food.


Ingredients

  • 1 lb Chicken breast
  • 8 oz Rice noodles
  • 2 cups Fresh vegetables (bell peppers, carrots, broccoli)
  • 1/2 cup Fresh herbs (cilantro, green onions)
  • 1/2 cup Peanut butter
  • 1/4 cup Soy sauce
  • 2 tbsp Lime juice
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Sesame oil
  • 1 tsp Chili flakes (optional)

Instructions

  1. Cook the Rice Noodles according to package instructions; drain and set aside.
  2. Sauté the Chicken in a pan with sesame oil over medium heat until golden brown.
  3. Add minced garlic and ginger; sauté for a minute to meld the flavors.
  4. Incorporate fresh vegetables and stir-fry until just tender.
  5. Mix peanut butter, soy sauce, lime juice, and chili flakes to make the peanut sauce.
  6. Add cooked noodles and sauce to the pan; toss to combine.
  7. Serve topped with fresh herbs for added freshness.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water if needed.
