Description

A perfect blend of flavors and textures, these easy-to-make Thai Peanut Chicken Wraps are ideal for a quick meal or snack, featuring fresh vegetables and rich peanut sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 large tortillas
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • ½ cup fresh cilantro, chopped
  • ½ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey (or maple syrup)
  • 12 tablespoons water (to thin the sauce if needed)

Instructions

  1. Mix together the peanut butter, soy sauce, lime juice, honey, and water in a small bowl. Stir until smooth and adjust consistency if needed.
  2. Take a tortilla and lay it flat on a clean surface.
  3. Place a portion of shredded chicken in the center of the tortilla.
  4. Add a handful of carrots, bell peppers, cucumber, red cabbage, and cilantro on top of the chicken.
  5. Drizzle some of the creamy peanut sauce over the vegetables.
  6. Fold in the sides of the tortilla and then roll it up tightly from the bottom.
  7. Repeat the process for the remaining tortillas and filling.
  8. Slice each wrap in half and serve with extra peanut sauce on the side.

Notes

These wraps are great for lunch, dinner, or as a party appetizer. You can also store leftovers in the refrigerator for up to 2 days.
