A perfect blend of flavors and textures, these easy-to-make Thai Peanut Chicken Wraps are ideal for a quick meal or snack, featuring fresh vegetables and rich peanut sauce.

- 2 cups cooked chicken, shredded
- 4 large tortillas
- 1 cup shredded carrots
- 1 cup sliced bell peppers (any color)
- 1 cup cucumber, thinly sliced
- 1 cup red cabbage, shredded
- ½ cup fresh cilantro, chopped
- ½ cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey (or maple syrup)
- 1–2 tablespoons water (to thin the sauce if needed)
Instructions
- Mix together the peanut butter, soy sauce, lime juice, honey, and water in a small bowl. Stir until smooth and adjust consistency if needed.
- Take a tortilla and lay it flat on a clean surface.
- Place a portion of shredded chicken in the center of the tortilla.
- Add a handful of carrots, bell peppers, cucumber, red cabbage, and cilantro on top of the chicken.
- Drizzle some of the creamy peanut sauce over the vegetables.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom.
- Repeat the process for the remaining tortillas and filling.
- Slice each wrap in half and serve with extra peanut sauce on the side.

These wraps are great for lunch, dinner, or as a party appetizer. You can also store leftovers in the refrigerator for up to 2 days.
