- 2 cups Milk
- 1 cup Pistachio Meat
- 1/2 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 3 tablespoons Cornstarch
Instructions
- Combine the pistachio meat and 1 cup of milk in a blender. Blend until smooth.
- Pour the remaining 1 cup of milk, sugar, and cornstarch into a medium saucepan. Whisk until well mixed.
- Cook the mixture over medium heat, stirring constantly, until it begins to thicken.
- Reduce the heat and mix in the pistachio blend and vanilla extract. Stir until combined.
- Remove from heat and let it cool slightly.
- Pour the pudding into serving dishes and refrigerate for at least 2 hours before serving.
Notes
Can be garnished with chopped pistachios, whipped cream, or a sprig of mint. Store leftovers in an airtight container in the fridge for up to 3 days.
